De nombreuses raisons nous portent à avoir une affection particulière pour le chiffre 7.  Nos 7 petits enfants côtoient nos cuvées aux 7 cépages cultivées sur les 7 collines de Puissalicon.

Emmanuel et Benoît, globe trotteurs de la vie moderne, font de leur priorité le métier de la vigne. Toujours bercés par le rythme du domaine, ils en assurent une continuité volontaire par un accompagnement passionnel.

Being far and near at the same time, rising to the challenge everyday,
pursuing the work of the family while instilling their modern vision.

Vine roots dig deep here in their favorite environment:
a clever mix of clay, limestone,
silt, pebbles and gravel soils.

Grapes ripen under the golden light of the Languedoc
sunshine and cool down in the sea breezes
and in the Mistral and Tramontane winds.

We are at the service of nature.
Indeed, it is nature that tells us when
and how to do things.

Our terroir, our vines are our treasure. Our vocation, our mission is to pass on to our children,
the future generations, the happy vines we inherited from our parents and before them,
the past generations. Faithful to the gift we received, we work our land the “organic” way,
in order to respect our environment.

We have added an intermediate step in the handling of the harvest with the help of a densitometric sorting machine.
Only the grapes at optimal maturity are selected.

These equipements allow us, year after year, to offer a profile continuity in our “cuvées” in agreement with both our and your expectations.

This is the first step in a multi-step winemaking process,
where tradition meets pioneering modernity

The sealed wine my father was buying for special occasions will be mine. At the time, we didn't talk about stoppered (nor corked!) bottles.

It is next to this cross, « belle » (beautiful) and symbolic, because it had been erected for the needy, because it has been regularly and until recently ornate with flowers, honored with processions, that our eponymous domain flourishes.

 

It is under her shade that we write the future of our tradition.

The remarkable benefits of this technique:

This type of soft pruning prevents trauma and offers less entry to fungi and other viruses or diseases.

 

The natural storing of starch by the vine is improved, which in turn facilitates a better restart of the plant’s lifecycle and associated budding during spring. The level of sugar the plant can accumulate is largely enhanced.

 

A greater bud potential compared to other techniques, helping the plant better adapt to climate change and its hazards.

A wider distribution of the canopy branches and of the grapes over a better ventilated area, which, especially in organic farming, facilitates the work against the threat of fungus and diseases, and permits the use of ozonated water which is chemical free.

An unsuspected grape quality lays in the bloom of the seed, its skin. As the grape seed is smaller, the ratio skin-liquid contained in the fruit is much more favourable.

Full cycle, going from O2 to O3, and then within a few hours naturally returning back to O2…

No additive, only a bit of electricity allows us to treat our vines with...ozonated water.

Ozone has potent natural virtues, and its natural breakdown produces oxygen.

 

There is nothing more natural than cultivating without chemical inputs!

Phytosociology and us

It takes at least 2 litres of water to produce one litre of wine. The water consumption of wine making washing-up is high. For more than 20 years, we have decided to recycle our effluents through a contemporary bamboo grove, in agreement with our environmental approach.

It eliminates all spraying, thereby avoiding odour and noise pollution caused by transport...

 

It is fully organic. No noise, no smell, no risk.
Only happiness!

The Côtes

De Thongue

« Deliberately a white wine, a rose wine by
conviction, a red wine by tradition.»

Côtes de Thongue is an IGP
(protected geographical indication) wine area
located in the catchment basin of the Thongue river, in Languedoc.

Jacques and François Boyer subscribed very
early to a continuous quality improvement
process.

The “Indication Géographique Protégée”
accreditation for the Cotes de Thongue
area was granted in 1982, and
benefited from the steer from Jacques

The landscape is very open, hilly, characterised by what is locally called “Puechs” (hills) culminating at 100 metres altitude.

The dominant geological formations that form the soil of Côtes de Tongue are marly sands, pebbled Villafrancian terraces and clay.

The three « terroirs » of the domain, namely
La Croix Belle, Coussan and Beròia
largely combine lthese different layers of soil that are so different, and yet, that complement each other.
